Thanks to the courage and passion of Manoli Rossi Ciampolini, the historic rural hamlet of Casone Gardini — dating back to 1686 and abandoned for centuries — has been meticulously and prestigiously restored. Today, it stands as a cutting-edge olive mill and a refined venue for olive oil tastings set within the beautiful 17th-century cloister. Visitors are invited on an unforgettable journey to discover the world of Extra Virgin Olive Oil, from the harvest to state-of-the-art milling processes, culminating in guided tastings paired with expert presentations.
At just over twenty years old, Manoli took the reins of the family farm, quickly developing a deep fascination for the world of Extra Virgin Olive Oil (EVOO). Over the years, his passion evolved into a true vocation. Through relentless research, dedication, and professionalism, he has created products of exceptional quality, characterized by rare and outstanding organoleptic properties, personally overseeing each phase — from harvesting to pressing.
