Craft Beer from Senatore Cappelli grain

For our craft beer we wanted to cultivate two precious ancient grains like the Senatore Cappelli and the Gentil Rosso in order to create products of the highest quality:

The labels were designed in a funny way, for this the choice of the cartoonist Tommaso Eppesteingher.

Lager Beer

With just a touch of astringence which makes for a smooth taste, this artisan beer is reminiscent of fresh bread. A just-right balance of barley malt and grain makes for a perfectly accented flavour profile. Enjoy with a meal or as a refreshing drink with friends.

Red Beer

At first view its amber appearance immediately recalls the particular colour of the cereal. The sweet notes of caramelized malts accompany the aroma of this cereal in perfect harmony, reaching the taste buds and finishing with a light taste and a refreshing acidity that beckons the palate to savour another drop.

Senatore Cappelli Pasta

We wanted to honour our extraordinary harvest of the ancient Saracen grain Senatore Cappelli. Since 2018, and thanks to the skilled hands of our local artisans, you can enjoy excellent bread flours and pastas, made with care using techniques passed down from generation to generation.

Today, this ancient-grain variety has become one of the stars of our homemade dishes. Thanks to its high nutritional content (low-gluten, and chock full of magnesium, potassium, calcium, zinc, not to mention vitamins B and E, and flavonoids), this grain can lower your cholesterol, and has anti-inflammatory and antioxidant properties. An excellent choice for those with food intolerances and allergies.

In 2020, we began to make flour with the Verna and Andriolo ancient grains, as well.

Stone-milled flour from ancient grains

Ancient grains are fascinating, their history spans generations of farmers and their families. We have cultivated and milled them into flour. Today, as a staple in our kitchen, they harken back to a time when all food was slow food, and continue to this day to be the masterful work of human hands, day-in and day-out.

Wine

“Riserva Gardini 2018”

This wine made from Cabernet Sauvignon grapes ferments for three weeks in stainless steel, and is then aged for 12 months in French oak barrels.

Thanks to the special mineral composition of the soil, the wine has a good complexity of aromas and a noteworthy structure and body.

With its intense ruby red colour and fresh aroma, fruity and pleasantly herbal, the discernible notes of blueberry and raspberry recall the Mediterranean scrub, fading into hints of myrtle and juniper. While its woody note is light and connotative.

Light and connotative note of boise.

The good persistence and the right tannin combined with a fresh acidity, make this a wine that should be refined in the bottle for some time and drank with pleasant surprise, pairing it with cured meats and aged cheeses, red meats even tough meats, such as wild game.

Honey

The honey our bees make come in three main flavours.

Locus and Clover

  • Look: light-coloured and warm
  • Flavour: wonderfully sweet and delicate, striking for its fruity-floral notes with hints of vanilla and cinnamon
  • Pairs with: soft cheeses

Eucalyptus

  • Look: amber-coloured
  • Flavour: assertive, balsamic
  • Pairs with: aged cheeses and grilled vegetables

Ivy and Wild Herbs

  • Look: white in colour
  • Flavour: a first note of sweetness evolves into a sustained, pleasant fresh flavour with herbal notes and cyclamen aromas
  • Pairs with: your morning breakfast on toasted Tuscan bread with salted butter
